I first got wind of this sinfully good and delicious cookie when our IT manager came over and shared this with us. What's so remarkable is he makes the best double chocolate cookies and cheesecake ever but the catch is, he never tasted them...because he's diabetic. (Amazing, isn't it? Just by smell, he knows what brings out the best taste.) I asked him the secret recipe for his ultimate double chocolate cookies and he willingly did so, but with the warning that it should be followed to the smallest detail or else it won't turn out great. As a result, I'm copying exactly the instructions by Ghirardelli in this post because we don't want to deviate at all.
Here it is, my friends! And I promise you, it is SOOOO GOOOOOD!
Ingredients:
3 eggs
1 bag Ghirardelli 60% cacao Bittersweet Chocolate Chips
6 tablespoons unsalted butter (or 3/4 stick)
1 cup sugar
1/3 cup all-purpose flour
1/2 tsp baking powder
1 bag Ghirardelli Semi-Sweet Chocolate Chips
Optional (1 cup of chopped walnuts if you want to)
Important material: Plastic wrap
Instructions:
In double boiler over hot water, melt the bittersweet chocolate chips and butter.
In large bowl with electric mixer, beat eggs and sugar until thick;
stir in chocolate mixture.
In a small bowl, stir together flour and baking powder; stir into chocolate mixture.
Gently mix in semi-sweet chocolate chips (and walnuts).
Using a sheet of plastic wrap, form dough into 2 logs, each 2 inches in diameter and about 8 inches long.
As dough will be very soft, use plastic wrap to hold dough in log shape.
Wrap tightly. Refrigerate at least 1 hour or until firm.
Preheat over to 375 degrees Fahrenheit. Unwrap dough with sharp knife, cut into 3/4-inch slices.
Place slices at least 1 1/2 inches apart on greased or parchment-lined cookie sheet.
Bake 12 to 14 minutes or until shiny crust forms on top but interior is still soft.
Cool on baking sheet. Enjoy the moment of timeless pleasure!
(Tip: Stater Brothers normally sells these Ghirardelli chocolate chips at $4.29 so when they go on sale, stock up. That's exactly what I did when they went on sale for $2.99)
